The 640g cream charger is the standard large cylinder for professional kitchens. Brands fill to slightly different weights, from 615g to 670g, but they all do the same job: one steel cylinder of food-grade nitrous oxide (E942) replaces a large box of 8g bulbs.
How much cream does a 640g cylinder whip?
A 640g cylinder holds the gas of about 80 standard 8g chargers. At one 8g charge per half litre, that is roughly 40 litres of liquid cream. A 670g cylinder holds about 84 charges.
What you need to use one
A cylinder does not screw directly into a cream whipper. You need a pressure regulator with a filling hose, which sets the pressure going into the dispenser. The regulator is reusable; the cylinders are single-use steel and can go to metal recycling once fully vented.

If you empty more than a box of 8g chargers a day, a cylinder is quicker and leaves far less waste. For low volumes, or kitchens with several small whippers, 8g Mosa chargers are simpler. For continuous production, see 2KG cylinders.
